Creamy Dijon Chicken

Garlic Confit:

1. Add garlic, herbs, salt, and pepper to an oven-safe dish (e.g., a pie dish).
2. Cover with olive oil.
3. Bake in the oven at 350°F (175°C) for 45 minutes. You can use the oil from the garlic confit to marinate the chicken or save for another recipe/finishing oil!

Creamy Dijon Chicken:

1. Marinate your chicken thighs with Creole seasoning, olive oil, and garlic powder (or season as desired).
2. Braise the marinated chicken thighs on both sides for about 3-5 minutes until browned (they will finish cooking in the oven).
3. Take the thighs out of the pan.
4. Deglaze the pan with white wine.
5. Add the Dijon mustard, cream, Creole seasoning, Parmesan cheese, and garlic confit to the pan and mix.
6. Add the chicken thighs back to the pan and cover with foil.
7. Bake in the oven at 350°F (175°C) for 45 minutes.
